Ingredients:
1 cup creamy peanut butter
1 cup powdered sugar
1 tsp vanilla extract
1 ½ cups graham cracker crumbs
1 ½ cups semi-sweet chocolate chips (optional for dipping)
1 tbsp coconut oil (optional for dipping)
Directions:
Prepare the Mixture: In a large bowl, beat together peanut butter, cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Add Graham Cracker Crumbs: Stir in graham cracker crumbs until fully combined.
Roll into Balls: Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
Optional Chocolate Coating: If desired, melt chocolate chips and coconut oil in the microwave in 30-second intervals, stirring until smooth. Dip each ball in the melted chocolate, coating completely, and place back on the parchment.
Chill: Refrigerate the cheesecake balls for at least 1 hour to let them firm up.
